Florian Ridder, Chef de Cuisine of the restaurant, believes strongly in the ‘farms’-to-table concept, and this is seen in the restaurant connecting with a farming collective of Singaporean and Malaysian growers and producers, as well as a Singapore kelong, as sustainable sources of food; and its garnishes being fully sourced from its own edible gardens on the grounds.
Highlights of the menu include the delightfully savoury Iberico Pork, their incredibly umami Uni Pasta, innovative takes on local dishes such as the Nasi Lemak Hash Brown and Prawn Donut, and a refreshing Greek Yoghurt that is the perfect way to end any meal.
