Living in a circuit breaker has meant that our interest in home cooking is at an all-time high, with many taking to the kitchen in a bid to fill the time – and their tummies – during self-isolation. So, it comes as little surprise to find that there have been several food and drink trends emerging from all this cooped-up creativity – but there’s one in particular that’s proving a hit across Instagram, Pinterest and TikTok: Dalgona coffee.
Consisting of an iced drink with fluffy, whipped coffee on top – which can be customised with a variety of different toppings – the craze first emerged in South Korea, before exploding online, thanks to its winning combination of delicious taste, chilled temperature (perfect for the warmer weather) and, perhaps most importantly, Instagrammable appearance. Even more conveniently, it can be whipped up using simple ingredients that you likely already have at home.
We spoke to Guy Betteridge, executive chef at the Kimpton Fitzroy hotel in London, who devised for us an exclusive recipe for a vegan version of the buzzy drink. So if you’re lactose intolerant, or are simply hunting for a dairy-free recipe, look no further. Just grab yourself a whisk, and off you go…
CINNAMON AND ALMOND DALGONA MOCHA
300ml Almond milk (unsweetened)
2 tbsp instant coffee
2 tbsp caster sugar
2 tbsp hot water
2 ice cubes
1/2 tsp cinnamon powder
Grated 70% dark chocolate
1/ Pour the almond milk into a glass and add the ice cubes.
2/ Put the coffee, water and sugar in to a mixing bowl.
3/ Using an electric whisk, beat until soft peaks appear – after about 30 seconds or so (can be substituted for a handheld whisk, but it will be harder to achieve the desired consistency).
4/ Place the whipped coffee on top of the chilled milk
5/ For the finishing touch, dust with cinnamon powder and grated dark chocolate.
