LUMO Bar & Restaurant Presents A Sustainable Christmas Dinner Option For Family And Friends

Fresh, seasonal ingredients take center stage in LUMO's holiday menu offering

LUMO

While the holidays are supposed to be a time to relax and rejoice with our loved ones, we all know how stressful they can end up being - there's shopping for gifts, endless socialising, and searching for places to wine, dine and party. Cover all your bases by inviting your crew out for a meal at LUMO Bar & Restaurant, an elegant Modern European joint serving up speakeasy vibes, sharing plates and delectable cocktails all night long. The name LUMO, derived from the Esperanto word for 'light,' reflects the restaurant's larger mission to bring creativity and positivity to your dining experience this festive season.

The South Bridge Road location boasts a lively 40-seater bar area for more casual outings, as well as a 17-seater open kitchen for more intimate gatherings. Perfect for groups big and small, the menu also changes periodically to ensure the dishes always use fresh seasonal ingredients, something Head Chef Dex Tew takes great pride in. Focusing on a maximum of four to five components per dish, Tew says he hopes the restaurant will encourage guests to pay closer attention to what goes into their food - and where it comes from. "All meats and seafood that we eat were once living beings," says Tew. "We want to share the brand ethos to always respect the ingredients and be more mindful of the origins."

Take the restaurant's pork options, for example - while only a piece of meat may be used for the protein portion of the dish, bone trimmings are used to infuse flavour into the sauce. And that's not all - Head Bartender Aaron Lancelot says LUMO's cocktails are made with sustainability in mind, as well. "We use almost the entirety of our ingredients to ensure minimal waste," says Lancelot, "using the whole of a lemon from the zest to the juice and even the pulps."

A highlight of the drinks menu is the Clover, a dryer cocktail for those who prefer just a hint of sweetness, featuring a uniquely homemade red wine reduction paired with cinnamon smoke. Like the other various options offered at the bar, its taste and consequential colour are inspired by the emotions usually associated with it - in this case, a spicier flavour profile inspired by passion, fire and fury for red.

Other top recommendations include the Norwegian Fjord Trout dish and the Canadian Prime Rose Pork Rack, which both introduce new ways of cooking these classic meats. A Spanish summertime classic, salmorejo, is presented alongside the trout dish as a sauce rather than the usual tomato-based cold soup. Hot roasted tomatoes are served as well to balance the flavours and better align with local tastes. The pork roast, on the other hand, is paired with padron peppers and a whiskey raisin reduction made in house, bringing a sweet kick to the dish.
