Specially curated by Britt Ng, Head Sommelier of Shangri-La Hotel, Singapore, and Yohann Jousselin, Wine Director of Shangri-La Hotel group, the wine programme will feature a selection of exquisite and unparalleled vintages, served with a pairing menu curated by Chef de Cuisine, Heidi Flanagan.

The Menu
Kick-starting the wine programme is the inaugural Iconic Wine Dinner to be held on 8 November, where guests will have the pleasure of savouring 8 exceptional vintages over a tantalising 5-course dinner.
Think richly-flavoured vintages with notes of fruit, spices, oak such as the Batard-Montrachet Grand Cru, Domaine Louis Latour, 2010 paired with a soup of turbot, potato, asparagus and scallion, Pessac-Léognan, Château Haut-Brion, 1985 1er cru classé coupled with veal sweetbread, parmesan, pea and Honshimeji mushrooms, as well as vintages produced from Château Mouton Rothschild, Pauillac (a First Growth Bordeaux vineyard in France that consistently produces some of the best wines) paired with Williams River MS5 tenderloin drizzled with béarnaise sauce. End the lovely evening on a sweet note sipping on the finest dessert wine in France, the Sauternes, Château d’Yquem, 2005 1er cru supérieur.
The Iconic Wine Dinner will be available on 8 November 2018, Thursday, at 7pm at $1,380++ per person. The dinner is exclusively for 10 diners, so be sure make your reservations now.
