For Those Who Like A Touch Of Whimsy
A Symphony of Origins: Terroir and Bloom at Ginger.Lily
The vibe: An upscale, airy respite on Orchard Road.
We all love a good story, but Hilton Singapore Orchard’s Ginger.Lily brings it to a whole new level by adding a culinary edge. Escape into A Symphony of Origins: Terrior and Bloom, a storybook-inspired afternoon tea set helmed by Hilton’s executive sous chef Cindy Khoo and Michelin-starred chef Adrien Descouls.
Each of the three courses represents a part of a story. It commences with an oyster covered in vin jaune (yellow wine) foam, then a Shepherd’s Broth with black truffle shavings, followed by a beef tartare seasoned with spiced tea and roasted artichoke sabayon, a thick, egg yolk-based sauce.
Served on a book-shaped shelf is the heart of Ginger.Lily’s new set: a savoury selection that can be enjoyed in any order. We suggest starting with the pink radish tarte as a palate refresher before diving into others such as the cold-smoked trout—a thick cut of house-smoked trout sandwiched between toast and cheese—a standout dish in our books alongside the hen’s egg with caviar, made with dashi and vodka mousse.
For those with a sweet tooth, look forward to a shelf that pulls open to reveal rows of expertly crafted desserts. Chef Khoo, who has a background as a pastry chef, recommends beginning with the avocado and lemon tart, before digging into others such as the hojicha honey madeleines, Hokkaido potato churros with kumquat cream, macarons with tea-infused ganache and more.
At Ginger.Lily, tea—courtesy of local tea company Pryce—is not just something to complement scones; it’s basically a course in itself. The star of the show is of course the namesake Pink Ginger.Lily, which blends the floral Alishan Oolong with torch ginger and rosemary to create a unique aroma. P.S. Guests will also get to take home a package of Pink Ginger.Lily tea.

Botanical Afternoon Tea at Portman’s Bar
The vibe: A cathedral of curves and sunlight, where towering latticed arches meet lush greenery.
Portman’s Bar’s Botanical Afternoon Tea takes cues from the hotel’s own urban farm, folding herbs, flowers and vegetables into every bite. The spread is playful and unexpected: seafood crepes topped with passionfruit marigold, crab salad cones with bush cress, and glazed eel layered with tobiko mayo and tempura lemon borage leaf.
Desserts bring in a touch of theatre and indulgent charm, with highlights like the “Urban Farm” chocolate crémeux topped with espresso and edible soil, and a frangipani tart with pistachio almond cream and strawberry compote. But the real showstopper is the tableside gueridon, a warm apple crumble assembled before your eyes and crowned with ice cream and mint. For something a little cheekier, go beyond tea and opt for the seasonal cocktail pairing or the whisky-spiked selection from the bar—a grown-up garden party with a twist.
